Have you ever wondered how you can measure the texture of chocolate? One way would be to use a GRINDOMETER or grind gauge, also known as a Hegman gauge. It is a precision instrument for measuring the particle size of chocolate.


To use it, spread a small sample of liquid chocolate on the measuring plate and spread it evenly across the metal plate using the scraper provided. The channel tapers towards the bottom, so that at some point the particles become larger than the height of the channel and start to leave streaks or expose the metal.



To read the measuring device, determine the point at which the chocolate no longer completely covers the channel of the measuring device and the metal surface can be seen. Read the corresponding numerical value at this point. However, this is not a straight “cut” line, but rather a color gradient. The numbers on both sides of the measuring device indicate the particle size in micrometers (thousandths of a millimeter); on our device, this is 1–100 µ (so that you can also test slightly coarser masses).

The aim should be to produce a fine chocolate mass of around 20 µ. Textures below 18–20 µ are very difficult for humans to detect.
